Description

Olivia Lobsters are wild-caught from the clear, cold waters of Atlantic Canada. When cooked, the shell is bright red and the meat is snowy white with a firm texture and a sweet yet distinctive taste.
Tails: Blast frozen, brine frozen, IVP, IQF. All sizes from 3-4 oz to 20-24 oz, packed in 10 lb cases
Claws & Arms: Scored, IQF. 3-5, 5-7 CT/lb packed in 10 or 20 lb cases
Whole cooked: IQF. 1-2.5 lb packed in 10 lb cases
Meat (CK): IVP. 1-2 lb packed in 12 lb cases
